Rajasthani Shadiyowali Dahi Lasun (Curd Garlic) Chutney











Ingredients:
  • Garlic flakes - 1 cup
  • Green chilli - 5-6 (slit)
  • Ginger - 1/2 cup (pieces)
  • Curd - 2 cups
  • Curry leaves - little
  • Cumin seeds - 1 tsp
  • Red chilli powder - 4-5 tsp
  • Turmeric - 1/2 tsp
  • Salt - As required
  • Ghee - 3 tsp
For masala:
  • Coriander seeds - 2 tsp
  • Cardamom - 3-4
  • Cinnamon - 4 (small pieces)
  • Cloves - 4
  • Black pepper - 1/2 tsp

Fry all the ingredients till it changes into golden brown colour. Fry in low flame & make a powder.


Method:
  • Take a kadai & add ghee to that.
  • When it melts, add ghee to that.
  • Later on, add chilli & ginger (as stated in the ingredients above).
  • When it changes into light brown colour, remove from the gas.
  • Allow it to become cool.
  • Then grind into a coarse paste.
  • Add garlic paste, masala powder, red chilli powder & salt, into the curd & mix well.
  • Then take the same kadai, add ghee or oil.
  • When it becomes hot, add cumin seeds, curry leaves & mix well.
  • Then add the curd mixture & stir well.
  • Keep the flame low in between & stir.
  • When the oil leaves sideways, remove & store it in the bottle.

Lamington Cake (Without Oven)















Ingredients: 
  • Powdered sugar - 1/2 cup
  • Milk - 1/2 cup (room temperature)
  • Maida - 1 cup
  • Baking powder - 1/2 tsp
  • Baking (cooking) soda - 1/2 tsp
  • Cocoa powder - 3 tbsp
  • Oil - 1/4 cup
  • Vanilla essence - 4 drops
  • Lemon juice - 1 tsp

Method:
  • Take a bowl or mixer, put milk, oil, sugar & mix well.
  • Then take a siever, add maida, baking powder, baking soda & cocoa powder & sieve nicely.
  • Mix with milk, sugar & mix nicely without lumps.
  • Add 1 tsp lemon juice & mix nicely.
  • Meantime, grease a tray & keep butter paper & pour the butter spread to level the tap. 
  • Preheat the cooker for 8 mins. Keep the cake tray & close the cooker. Remove the ring & whistle.
  • Keep in medium flame for 25 mins.
  • Then switch off the gas & let it remain for 10 mins.

Chocolate syrup:
  • Take a kadai, add 2 tsp of cornflour, 1 cup water, 1/4 cup sugar, 1/4 cup cocoa powder & mix well.
  • Heat the kadai & stir nicely till it becomes syrup by boiling.
  • Remove from the gas, add 1/2 tsp of  oil & 2-3 drops vanilla essence.
  • Meantime take one tbsp of sugar and 3 tbsp of water  mix sugar in water.
  • When the cake becomes cool, slowly release the side & remove it from the plate.
  • Make a slice & add juice or sugar syrup (1-4 tbsp).

Now pour this chocolate syrup on the cake & garnish with desicated coconut powder.

Snow Sweet (Dessert)










Ingredients:
  • Milk - 1/2 litre
  • Sugar - 1 cup
  • Corn flour - 3 tbsp
  • Butter or ghee - 1 tsp
  • Desicated coconut powder - 1/4 cup
  • Vanilla essence or Cardamom powder - 1 or 1/2 tsp

Method:
  • Take one vessel, add milk, butter/ghee, sugar, cornflour, vanilla essence/cardamom powder.
  • Mix nicely without lumps.
  • Then keep it on the gas at medium flame.
  • Stir continuously till it becomes thick.
  • Meantime, take some small bowls or vaatis & grease with ghee. 
  • Pour the mixture & tap.
  • Then keep it in the fridge for 3-4 hours.
  • Just release it sideways & reverse it for enabling it to get a proper circle.
  • Apply cherry or cashew on top.
  • Dry it with desicated coconut power.
  • Your dessert is ready.

Brinjal Masala













 


Ingredients:

  • Brinjal - 250 gms (Cut it lengthy & soak in water)
  • Onion - 2 (Cut it lenghtwise)
  • Tomato - 2 (Cut it lenghtwise)
  • Green chilli - 2 (slit)
  • Tamarind powder - 1/2 tsp
  • Jaggery - 1 tbsp
  • Salt - As required
  • Turmeric powder - 1/2 tsp
  • Red chilli powder - 1 tsp
  • Coriander leaves - little


For grinding:

  • Seasame seeds - 1 tsp
  • Peanuts - 1 tsp

Roast both without oil & grind to a smooth paste. Keep aside along with tamarind.


Method:

  • First take a kadai, add enough oil & fry brinjal pieces till it changes its colour.
  • Drain & keep aside.
  • In the same oil, add onion, tomato & green chilli.
  • Stir till it changes & becomes mushy.
  • Now add all dry masala & ground masala & mix well.
  • Now add fried brinjal pieces also.
  • Close the lid & allow to boil for 10 mins in medium flame.
  • When the oil leaves sideways & nice aroma comes, remove from the gas.
  • Garnish with coriander leaves.
  • Serve with roti & steamed rice.

Banana Dosa







Ingredients:

  • Raw rice - 1 1/2 cup
  • Poha - 1 cup
  • Jaggery - 2 tbsp
  • Salt - As required 
  • Oil or ghee - As required
  • Ripe banana - 2-3 (cut)


Method:

  • First wash the poha & keep aside.
  • Then soak the rice for 4 hours.
  • Then grind rice, poha, jaggery & banana together in a mixer to a fine paste.
  • Mix salt & make dosa immediately.
  • No fermentation required.
