Thrunelvali type morekulumbu








Ingredients :
  • Ladies finger [ bhindi ] - 7 to 8 [ cut into 2 inch long piece ]  fry in oil till light brown in colour .
  • Sour thick curd - 3 cups
  • Turmeric powder - 1 / 2 tsp
  • Salt - as required

Grind together :
  • Grated fresh coconut - 1 / 2 cup
  • Green chillies - 10 to 12
  • Coriander seeds - 1 tsp
  • Cumin seeds - 1 / 4 tsp
  • Thuar dal - 1 tbl. sp. [ level ]
  • [ soak in water for an hour ]
  •  
For seasoning :
  • Coconut oil - 2 tsp
  • Mustard seeds - 1 / 2 tsp
  • Fenugreek - 1 / 4 tsp
  • Red chillies - 2
  •  
For garnishing :
  • Curry leaves, coriander leaves

Method :

First fry ladies finger in hot oil till it change brown in colour and keep  aside. Whip curd and mix with ground paste, salt, and turmeric powder. Add fried ladies finger and boil for few minutes. Heat coconut oil, add seasonings and mix with kulambu. Garnish with coriander and curry leaves.

Variations :

Reduce green chillies and add few red chillies while grinding. Add little chutney dal also while grinding. Omit thuar dal and add chutney dal while grinding.

Katta bajji







Ingredients :

  • Cabbage - 1 / 2 cup [ chopped ]
  • Iddli batter or 
  • handuva batter - 1 cup
  • Onion - 1 big [ chopped ]
  • Crushed pepper - 1 / 2 tsp
  • Coriander seeds - 1 tsp [ crushed ]
  • Asafoetida - 1 / 4 tsp
  • Salt - as required
  • Turmeric powder - 1 / 2 sp
  • Green chilli - 2 [ chopped ]
  • Ginger- 1 / 2 inch piece [ chopped ]
  • Coriander leaves - little
  • Sour curd - 2 tabl. sp
  • Cooked rice 1 / 4 cup
  • Oil - for deep frying

Method :
Except oil mix all the other ingredients in a mixing bowl. Make a thick dough, and make small round balls the size of a big gooseberry. Deep fry in hot oil till golden on all sides. Remove from the oil using jalli spoon. Keep over a colander for the excess oil to drain. Serve hot with sauce, chutney etc.

Allu gravy [ potato gravy ]






Ingredients :

  • Potato 4 to 5 [ boiled peel  and cut in to 4 pieces ]
  • Red tomato - 3 [ cut in to 4 pieces ]
  • Salt - as required
  • Sugar - little
  • Turmeric powder - 1 / 2 tsp
  • Garlic flakes - 2 to 3
  • Red chilli powder - 1 tsp
  • Mustard seeds - 1 / 4 tsp
  • Black pepper - 5 to 6
  • Oil - as required
  • Fresh cream - 2 tabl. sps.
  • Fresh coriander leaves - little

Method :

First grind garlic, pepper, salt, red chilli powder, turmeric, and mustard seeds in mixer to smooth paste and keep aside. Then take one kadai, heat oil and fry the ground paste in low flame till the raw smell goes. Then add required water along with cut potatoes and tomatoes. Allow to boil till the tomatoes become soft, and the gravy becomes thick. Before removing from the gas, add fresh cream, sugar and mix well.Garnish with fresh coriander leaves. Serve with puri, paratha, and rice.

Fruit Yogurt Recipe





Ingredients :

  • Mixed fruits - 2 cups [ banana, apple, grapes, strawberry, water melon ]
  • Fresh youghrt [ curd ] - 2 cups
  • Powdered sugar or sugar free - 1 / 2 cup
  • Vanilla essence - a few drops
  • Cornflakes - 1 / 4 cup

Method :

Take one bowl, add youghrt, powdered  sugar, essence and beat well. Mean time cut all fruits into small pieces, and keep aside. Pour beat youghrt on the fruits and mix well. Keep it in the fridge to become chill. Before serving garnish with cornflakes.  Your yummy fruit youghrt is ready.

Kovakkai Masala Recipe - Tinda Masala Recipe






 Ingredients :

  • Kovakkai - 1/ 2 k. g. [ cut in to thin  lenth wise ]
  • Coriander seeds - 1 tabl. sps.
  • Channa dal - 1 tabl. sps.
  • Urad dal - 1 / 2 tbl. sps.
  • White sesame seeds -1 / 2 tsp
  • Peanuts - 1 / 4 cup
  • Curry leaves - little
  • Dry red chillies - 5 to 6
  • Grated fresh coconut - 4 tabl. sps.
  • Fresh coriander leaves - little
  • [ Except kovakkai  fry  all other ingredients in little oil,  powder it in mixie and keep aside.] 
  • Salt - as required
  • Turmeric powder - 1 / 2 sp
  • Red chilli powder - 1 / 2 sp
  • Dosai melakai podi - 1 tsp
  • Sugar - 1 / 2 sp
  • Oil - 3 tabl. sps.

For seasoning :
  • Mustard seeds - 1 sp
  • Black broken gram dal - 1 / 2 sp
  • Curry leaves - little

Method :

First take one deep bottom kadai. Heat oil, season with required ingredients and add kovakkai, little peanut  to that, mix well. Add salt, turmeric, red chilli powder, sugar and fry for 2 mintues. Add little water and close it with a lid. Keep the gas in low flame till the subji becomes soft. Then add the grounded  masala  powder to that, and fry for some more time. When the subji start to  stick in the bottom of kadai remove from the gas. Garnish with chopped coriander leaves.Serve with roti,  sambhar rice,  and rasam rice.

Black seedless grapes pickle













Ingredients :

  • Black seed less grapes - 1 / 2 k. g.
  • Garlic flakes - 4 to 5 [ cut into small pieces ]
  • Ginger - 10 gms [ cut into small pieces ]
  • Green chillies - 4 to 5 [ chopped ]
  • Curry leaves - little
  • Salt - as required
  • Turmeric powder - 1 / 2 sp
  • Red chilli powder - 1 1 / 2 tsp
  • Seasame oil - 4 tbl. sps.

For masala :
  • Mustard seeds - 1 / 2 tsp
  • Methi seeds - 1 / 2 tsp
  • Curry leaves - little
  • [ fry all these things without oil and make powder ]

Method :

First take one kadai heat it and fry the masala ingredients till it change in brown colour.Make it cool and powder it. Then pour 1 tbl. sp of oil, heat it and fry green chilli, ginger, garlic pieces till it becomes soft, and remove from the gas and keep aside. Then pour the remaining oil in the same kadai,  add  the seed less grapes to that, and fry in low flame till the juice become dry and the oil seperate. Add the fried green chilli, ginger, garlic and mix well. Then add salt, turmeric, red chilli powder, and masala powder. Mix well and allow to boil for 5 to 10 mintues in low flame, till all mix well together. Remove from the gas. Serve with roti, rice etc.
